Who among us wouldn't want to believe in miracles as sincerely as children do? Why not forget the Christmas hustle for a moment and take time to prepare a wonderful baked treat with the whole family, with no limits on decoration! Did someone say gingerbread? Even better, a soft and tasty gingerbread banana bread that takes only 15 minutes to prepare. Get a loaf pan, nuts, cookies, cranberries, chocolate, and as many pairs of hands as you can find nearby, and guaranteed is a fun quality time and well... a bit of cleaning up afterwards!
Once again, the recipe is gluten-free if you choose lactose-free cream cheese and butter, then it's alsolactose-free. P.S., eat the cake warm and why not, with Nick’s ice cream!

- 250g flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1.5 tsp gingerbread spice
- 1 tsp vanilla sugar or Nick’s vanilla-flavored drops
- 1/4 tsp salt
- Mix the dry ingredients together.
- 4 ripe bananas OR optionally 3 bananas and 1dl finely grated carrot
- 50g butter
- 2 eggs
- 115g kefir
- 1 bar dark Nick’s chocolate
- 25g Nick’s sugar substitute
- 95g honey
Whisk butter, sugar, and honey together. If using vanilla drops, add those too. Add mashed bananas, kefir, and egg. Blend the mixture and slowly mix in the dry ingredients. Finally, add chopped dark chocolate and grease the loaf pan with coconut oil or butter. Decorate with chocolate and banana slices or leave undecorated and prepare a cream cheese topping for the cooled loaf.
1 pack Philadelphia light 30g Nick’s sugar 2 tbsp lemon juice Mix the room temperature cream cheese, sweetener, and lemon juice into a smooth mass.
