The word Xylitol comes from the Greek "xylo", which means "tree" and "itol", which refers to sugar alcohol. Maybe you already put the two ends together. Yes, it really is birch sugar. From the trees, a really cool guy! :) Xylitol is harvested from birch trees or corncobs. It is used as a natural substitute for sugar, as it replaces it in sweetness one to one. It does not affect blood sugar or insulin levels. As an added bonus, it has 40% fewer calories than sugar. Win win!
